Our Pork shoulders are %100 USDA inspected and purchased locally.
We start by rubbing down the shoulder with your choice of three different options; our Smoker Seasoning, our Swamp Seasoning or good old fashioned salt and pepper. Once they’re rubbed down, we let them stand in the fridge for about 8 hours then smoke them to perfection.
For the customer that wants to finish cooking the shoulder at home, choose option “ROAST”. Option “ROAST” is smoked to an internal temperature of about 185 degrees and can be simply placed in a 350 degree oven until the internal temp reaches 205 degrees. Then it’s ready to pull apart for delicious sandwiches.
Or let us do the pulling and seasoning for you! Choose option “PULLED”. The “PULLED” option pork shoulder is smoked to an internal temperature of 205 then pulled and your chosen rub is reintroduced into the pork for extra delicious sandwiches.
