Our “made to order” sausages are delicious! We stuff all our sausages in natural casings and then slow smoke them over our hard wood blend of pellets for about 5 hours to give them a really good smokey flavor.
Our SPICY Andouille starts with %100 USDA inspected pork shoulder. We hand cut the meat, run it through the grinder and then mix in our Cajun seasoning blend. To make it our SPICY rendition, we add in some extra spices and a bit of our home grown smoked habaneros for just the right amount of heat! This sausage has just enough heat to tease the “pepper heads” BUT it’s mild enough that most people can enjoy it.
Each sausage order usually takes around 7 days from order to ship; we don’t rush perfection!
